White Wine & Parsley Mushrooms

On a completely random Tuesday evening, I had leftover white wine and a container of mushrooms that desperately needed using. So, I whipped this up and it was a hit! They are easy to make and a delicious side for any protein -- meat or otherwise!

Ingredients:

1 container of baby bella (crimini) mushrooms, rinsed

1-2 tbsp. parsley leaves (fresh is always best)

1/3 a cup of white wine - we have now used both a pinot grigio and a sauvignon blanc

kosher salt and freshly ground black pepper, to taste

1-2 tbsp olive oil


FIRST: Preheat oven to 375 degrees. Spread olive oil on baking pan. Dump rinsed mushrooms onto pan.


THEN: Drizzle white wine over mushrooms, add salt and pepper (generous amounts are favorable), and then add parsley leaves.


FINALLY: Cook for approximately 25-40 minutes, depending on how well-done you like your shroomies.
