Tomato Salad

This is hardly a recipe because it involves so little time, work, and energy, and yet it yields the most delicious results!


Serves 4-6

Ingredients:

  • 24 oz. tomato medley, halved

  • olive oil, measurement varies (see below)

  • flaky or kosher salt

  • chives, cilantro, OR parsley measurements vary (see below)


FIRST: Place all halved tomatoes in a large serving bowl. Drizzle with enough oil so they're, as Alison Roman says, "just barely swimming in it" -- taste -- and adjust for taste preferences. I also learned from Ms. Roman that you only want to use olive oil that you'd be willing to eat off a spoon -- that's the level of flavor you're looking for in olive oil. I guess you really do learn something new every day, huh?!


THEN: Cut up herbs: chives, cilantro, or parsley all work just fine. Add gradually, stirring and mixing them in completely and evenly. Of course, then taste and add more as desired.


FINALLY: Sprinkle with two pinches of salt, and once mixed completely and evenly, taste and add more as desired.


This treat is a sure way to win hearts at any summer get together. Hell, we enjoy this dish weekly, year-round; it's an easy, delicious favorite!
