The Perfect Topping: Pickled Jalapeños and Onions

This quick pickle recipe is perfect to keep in your fridge for any taco or sandwich recipe. My husband loves these on hot dogs and burger, too!


Ingredients:

  • 1 red onion, sliced

  • 1 yellow onion, sliced

  • 3-4 jalapenos, sliced

  • 1-2 cloves of garlic

  • 2 tsp. ginger

  • rice vinegar


The flavor is robust, but not spicy. It relies largely on the mildness of rice vinegar, the heat of the jalapenos, and the zest of the ginger and garlic.


How to make it:

Take the sliced onions and jalapenos and drop them into a mason jar. Press the garlic, or slice it, and add it and the ginger. Then pour vinegar until jar is 2/3 of the way filled. Add water to remaining space, and cover tightly. let sit for at least 30 minutes. The longer it sits, the better it tastes!
