This dish is perfect for large groups, like Sunday afternoon football, or an intimate bridal shower.
A tribute to one of my favorite stop-motion films, Boxtrolls, this dish is a simple appetizer, or could serve as a main dish if you're only feeling peckish!
In the movie, the town of Cheesebridge features many cheese-related puns, and the wealthy elite of the town are OBSESSED with cheese. During one of the peak scenes of the film, Lord Portly Rind unveils what he calls The Briehemoth, a giant wheel of brie cheese.
The gargantuan wheel goes tumbling down the stairs and out the front door, diverting the focus from the villain of the story.
Our version of The Briehemoth features gooey, molten Brie topped with Stonewall Kitchen's Maple Bacon Onion Jam.
Preheat oven to 400 degrees.
Ingredients:
1 wheel of Brie, rinds cut off or melted off
2-4 tbsp. Maple Bacon Onion Jam
1 tbsp. olive oil or butter, unsalted
You'll need a baking dish of some kind...
To remove the rind of the Brie you can tediously cut off the rind, or you can melt the Brie down and fish out the rind bits.
Once you've removed the rind from the Brie, sprinkle oil or spread butter in baking dish. Then place the Brie in the baking dish, spreading throughout as much as possible. If you went with the cutting method, just scatter and stack the chunks you sliced. Then spread the jam over the top of the cheese.
Bake until Brie top gets slightly golden brown, about 10-15 minutes.
