Bacon & Tomato Pasta with Caramelized Onions
Ingredients (serves 4-6):
2 bags of pasta, your choice - calamarata recommended
6-8 strips of thick-cut bacon
2 tbsp. sugar or honey
1 hole Vidalia onion, diced
1/2-2/3 cup sliced tomatoes
1/3 cup apple cider vinegar
1/3-1/2 cup water
FIRST: Cook bacon in the oven for 15-17 minutes @ 425; simultaneously caramelize onions in a pan.
THEN: When onions caramelized, add tomatoes and vinegar and sugar. Cook sauce down to desired thickness, and add water, continue to cook down.
MEANWHILE: Cook pasta in a separate pot while making the sauce. Follow pasta brand instructions to al dente.
FINALLY: Add cooled and broken up bacon to the sauce, tasting occasionally. Mix with cooked pasta. Serve warm.
