Years ago, my cousin Ian said to me that if he were king of the world, there would only be sweet potato fries. Now that's an executive order I can get behind!
This is my go-to recipe when I'm feeling peckish and want something savory, but not too heavy or bad for me!
Ingredients (serves 1-2):
1 large sweet potato, sliced into fries
salt and pepper, to taste
1/2 tsp. garlic powder
1/2 tsp. paprika
1-2 tsp. sesame oil (or veg. oil)
Preheat oven to 425. Line baking sheet with aluminum foil.
Toss all ingredients in a mixing bowl until fully and evenly combined. Bake for 40 minutes, or until desired roastedness (yes, I know this isn't a word) achieved.
Below is a dip I highly recommend - thanks for the recommendation, Blue Apron - to go with these babies!
Black Bean Mayo - A Perfect Marriage!
This dip is the PERFECT marriage to the savory treat that is the sweet potato fry.
Ingredients:
4 tbsp. mayonnaise
2 tbsp. garlic black bean sauce
