In this corona-pocalypse, we've all got a ton of time on our hands. So, I've delved into new recipes, and I AM LOVIN' IT! Of course, this recipe isn't my own, but I've listed the instructions below, which can also be found here.
Ingredients:
8 scallions, sliced crosswise
12 tbsp. butter, unsalted and divided
hefty pinch of salt
1 tsp. fresh ground black pepper
1 3/4 tsp. baking powder
1/2 tsp. baking soda
1 1/4 tsp. granulated
2 1/2 cups of flour
1 1/4 cups sour cream
flaky sea salt
FIRST: Preheat oven 425 degrees. Mix dry ingredients in a large mixing bowl.
THEN: Melt 2 tbsp. of butter, and set aside. Using the remaining 10 tbsp. of chilled butter, add to dry mixed ingredients gradually; mix with hands. Using a spoon, mix sour cream in until combined evenly.
THEN: Lightly flour surface (counter or cutting board) and mix scallions in gradually; knead lightly as you go, but not too much. When scallions are mixed evenly and thoroughly, create a rectangluar block of dough and then cut into 8 rolls.
FINALLY: Place biscuits on parchment paper on a baking sheet. Brush with melted butter and sprinkle with flaky salt. Cook for 20-25 mins. Serve hot with Kerrygold butter.
