These days, it seems like everyone I talk to is looking for projects. Any sort of project, just something to stay busy. So, today's project for me was some fun shaped cookies. I used Butter Baked Goods' recipe, as shown below. You need to plan to use some recipe for Royal Icing if you really want to make these a treat.
Makes about 2 dozen cookies
Ingredients:
3 cups of all-purpose flour
1 1/2 tsp. baking powder
1 1/2 cups of butter, room temperature (unsalted)
3/4 icing sugar
1/2 cup granulated sugar
2 tbsp. pure vanilla
FIRST: Preheat the oven to 350 degrees. Cover two cookie sheets in parchment or spray with non-stick cooking spray. Personally, I won't use the sprays -- I'll put some Crisco on a paper towel and wipe down the sheets for the same non-stick effect. Sift together the flour and baking powder onto a large piece of parchment and set aside.
THEN: In a stand mixer fitted with a paddle attachment, cream the butter and sugars on medium to high speed, until light and fluffy. Scrape the sides of the bowl. Add the vanilla and mix to combine. Scrape the sides again.
THEN: Turn the mixer to low and add the dry ingredients and mix until fully and evenly combined. Shape the dough into a large disk, about 1 inch thick, and wrap in plastic wrap. Chill for at least an hour.
THEN: Divide the chilled disk into two, and place half the dough on a lightly floured surface. Roll the dough out to about 1/4" thickness. Then, using your favorite cookie cutters, cut about a dozen cookies. Carefully transfer to the prepared cookie sheets and place about 1/2" apart.
THEN: Roll out the second disk of dough and repeat the last step. Bake in the preheated oven for 15 minutes or until the cookies are lightly browned at the edges.
FINALLY: Remove from the oven and allow to cool for 10 minutes. Then transfer to racks to cool completely. Once totally cooled, apply royal icing as desired.
