Salmon, Two Ways

Honey-Cilantro-Lime Salmon

This refreshing dish is a perfect end of summer treat while the weather is still nice! Enjoy this on your back patio, pack it up and take it to a local park, or prep it for the week ahead for a lunchtime treat!


This is one of my family's favorites. From my very picky husband, to my very adventurous and veteran cook of a father, everyone loves this dish.


Ingredients (serves 4):

  • 1 salmon fillet

  • salt and pepper to taste

  • 2 tbsp. of melted butter

  • 3 limes, 2 juiced, 1 sliced thinly

  • 4 tbsp. honey

  • 2 tbsp. minced garlic, or garlic powder alternatively

  • 1/3 cup cilantro, chopped roughly


Preheat oven 375, cook for 17-20 minutes.


Mix all ingredients together except the fillet, sliced lime, and a small amount of cilantro for garnishing. Then, place aluminum foil on a cooking sheet, and place the fillet in the foil. Salt and pepper fillet, then pour mixture over, covering evenly. Cover fillet with lime slices and remaining cilantro. Seal aluminum foil. Cook 17-20 minutes, always check the temperature before serving.


Maple Walnut Salmon

This is another family favorite. Easily my go-to for my sister-in-law, who absolutely LOVES this dish! Even our friend's pregnant wife requested it, and we all know how picky pregnancy belly can be!


Ingredients (serves 4-6):

  • 2 salmon fillets

  • 2 tbsp. butter, unsalted, for cooking sheet

  • salt and pepper to taste

  • 3-4 tbsp. maple syrup

  • 1-2 tbsp. brown sugar

  • 1/2 cup chopped walnuts

Preheat oven 375, cook for 17-20 minutes.


Mix all ingredients together except the fillet and walnuts. Then, place aluminum foil on a cooking sheet, pour melted butter onto foil, and place the fillet in the foil. Salt and pepper fillet, then pour mixture over, covering evenly. Cover fillet with walnuts. Seal aluminum foil. Cook 17-20 minutes, always check the temperature before serving
