After Thanksgiving there's always an overwhelming amount of leftovers, right?
But what do you DO with those leftovers?
That was the question I was asking myself after we hosted our first Thanksgiving. I didn't want to make another sandwich (boring!) or a casserole (double-boring!), so I decided to try and get creative. Using some uncooked chicken breasts I had thawed and our leftover turkey, I crafted this succulent concoction!
Ingredients:
3-4 chicken breasts (and whatever turkey you've got left, if applicable)
1 pack Sargento sharp cheddar cheese (shredded)
1-2 small yellow onions, diced
2 tbsp. cumin
2 tbsp. paprika
1 1/2 tsp. cayenne
2 tbsp. butter, unsalted
1 tbsp. garlic powder
FIRST: Add all ingredients to crockpot. Set to cook on low for 6 hours or high for 4 hours. If using leftover turkey, shred the sliced turkey when initially adding it to the crockpot.
THEN: Check on the food halfway through and begin shredding chicken breasts. Continue to check occasionally, if possible, and continue to shred the meat. Only do so if it's tender and pulls apart easily!
FINALLY: Heat rolls and serve as sandwiches or with tortillas!
