Here's another delicious corona-ppropriate recipe! Not mine, but nevertheless, delicious! It's originally from RecipeTinEats which I've adjusted minimally. All the photos are also from RecipeTinEats, because they just look so scrumptious.
Ingredients:
2 lb potatoes, peeled and thinly sliced (1/10" thick)
2 tbsp butter, unsalted
2 garlic cloves, minced
1/2 cup heavy cream
1 tsp dried thyme
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 cup grated cheese (cheddar, gruyere, swiss, mozzarella)
Fresh thyme leaves for garnish
1 tbsp. Crisco or butter, for greasing pan
FIRST: Using a folded paper towel and some of the Crisco, grease a 12-hole muffin tin; alternatively, use parchment paper to line each cup.
THEN: Place butter, garlic, cream, salt and pepper in a small to medium sauce pan, simmer on low-med heat until it begins to just bubble, set aside. Alternatively, microwave for 30 seconds.
THEN: Place the slices of potatoes in the muffin tin, filling roughly halfway. Then use half the cream mixture to cover the potato slices. Then, half the grated cheese over the potatoes stacks. Top with remaining potatoes slices, drizzle with remaining cream mixture.
FINALLY: Cover loosely with foil and bake for 35 minutes. When removed from oven, sprinkle evenly with remaining cheese, and bake without foil for 10 minutes.
