My husband's favorite desserts in the world are German chocolate cake and pecan pie. So, I need to be able to make a lot of pecan pie when the fall and winter holidays roll around, and frankly, I want it to be easy. When I'm cooking Thanksgiving or Christmas dinner, the last thing I want to have to worry about are the intricacies of melting sugar just-so, and so, I use this recipe for pecan pie. It's become such a hit that every year I make pies for two sets of friends of ours, just so they can each have one.
Ingredients:
1 cup Karo syrup
3 eggs
1 cup sugar
2 tbsp. butter, melted
1 tsp. vanilla or almond extract
1-1/2 cups of chopped pecans
9" frozen pie crust
FIRST: Preheat oven 350. Using a stand mixer, mix all ingredients until thoroughly combined.
THEN: Pour mixture into frozen pie crust. Decorate with pecan halves if desired. Cook for 60-70 minutes. Serve warm.
