Jalapeño Popper Chicken Pasta

Hey y'all!


Happy Monday. Often, my husband and I do meatless Mondays, but we had some bottom-of-the-bag chicken I wanted to use up. So, tonight we'll be having pasta with jalapeños, chicken, caramelized onions, and a creamy, cheesy sauce. It should be delicious!


I happened to be home sick this day, so I wanted something savory and warm. That also means I had time to do this in a way that's a bit more time consuming. I did use a crockpot for this recipe, and you can too. Mine has the ability to saute, which meant I could prep the onions and jalapeños in advance. You might need to do the first part of this recipe the night before, if you're going to toss the chicken into the crockpot before heading to work in the morning.


For the preparation (night before if you need):


Ingredients:

- One whole vidalia onion, or yellow onion, diced

- Two jalapeños, seeded and diced

- Two cloves of garlic, pressed

- 1/2 cup of chicken broth

- 3 tbsp. unsalted butter


Take the butter and place in either a sauce pan or crockpot set to 350 degrees, or medium heat for a burner. Let the butter melt and toss in onions until browned. Add jalapeños and allow to cook, charring as they cook, until browned. Then add chicken broth and cover with lid. Allow about half the chicken broth to burn of and set aside or refrigerate overnight if desired.


Crockpot Cooking (the rest of the recipe!):


Ingredients:

- 1lb of chicken breast, cut into 1-inch pieces

- 4 oz. cream cheese

- 4 tbsp. Humboldt Fog cheese

- 4 tbsp. grated Jarlsberg cheese

- 1 bag of pasta (we used radiatore)

- 1 pot (for boiling pasta)


1. Add chicken to crockpot filled with liquid from prep work. Set to cook on either high for 3-4 hours or low for 4-6 hours.

2. Add cream cheese and cheeses, and cover with lid.

3. At about the halfway mark, stir the crockpot mixture. You may stir more frequently if you choose.

4. when about 30 mins left or less, depending on how attentive you want to be, begin preparing the pasta. Follow pasta bag/box directions. Cook to al dente, rise, and cool. Add 1 tbsp. butter to keep pasta from sticking together.

5. When chicken and sauce are ready, add pasta to crockpot and fold in until fully mixed.

6. Serve hot.
