Love macaroni and cheese as I do, it's not healthy, and generally, it can be a pain to make! Here are two ways to make this healthy alternative to traditional mac and cheese.
Instructions for making both versions: Preheat oven to 400 degrees. You'll need a 9x9 or 13x9 baking dish and a large mixing bowl.
Use 2 tbsp. oil (I use olive oil cooked with garlic confit) to line bottom and sides of a baking dish.
FIRST: Allow your cream cheese to sit and drop in temperature to soften. Then, mix chicken broth, cream cheese, and garlic together in small mixing bowl.
THEN: Mix all remaining ingredients together in a large bowl until combined evenly.
FINALLY: Cook for 20-30 minutes if you want it somewhat crunchy. If you'd prefer it to be tender all the way through, 30-40 minutes. Optional: top with bread crumbs and parmesan cheese.
Cheddar Jalapeño Cauliflower Mac
This spicy twist is a zesty take on this classic twist!
Ingredients:
1 whole head of white cauliflower, chopped
2 jalapenos, thinly sliced or diced
1/2 yellow onion, diced
1 cup cheddar cheese, sharp preferred
4-5 oz cream cheese
1/2 cup of any other desired cheese, we often use Jarlsberg
2 tbsp. butter, unsalted
salt and pepper to taste
1/3 cup chicken broth

This savory take on the classic is more similar to traditional macaroni and cheese.
Ingredients:
1 whole head of white cauliflower, chopped
2 cloves of garlic, minced or pressed
1/2 yellow onion, diced
1/2 cup Parmesan cheese, or alt.
1/2 cup Asiago cheese, or alt.
1/2 cup Manchego cheese, or alt.
4-5 oz cream cheese
2 tbsp. butter, unsalted
salt and pepper to taste
1/3 cup chicken broth
