First off, let me say that the hiatus I took at the end of 2020 was...uh...inexcusable.
I don't really have an excuse for it, nor will I make one! I needed time to myself and so I took it; the lesson here, for me, is to not be hard on myself.
All that being said, I am now committed to getting back to blogging once a week and sharing my favorite recipes! I will be altering the formatting of my posts, only slightly, to make the "Ingredients" and the step-by-step headings clearer.
This one is an adaptation of an idea I saw floating around online for a healthy-ish alternative to Buffalo Wings. Did I mention these are roasted/baked and not fried, too?!
We've made these with just Buffalo sauce or including Ranch as we've recommended here. However, if you like a spicier flavor, use less ranch or omit it entirely!
Preheat oven to 400 degrees.
Ingredients:
1 head of cauliflower, cut into bite-sized florets (bigger or smaller as you wish)
1/3 bottle of Buffalo Wild Wings Mild Wing Sauce, or any Buffalo sauce of your choosing
1/3 a bottle of Drew's Ranch Dressing, or any Ranch dressing of your choosing
2 large eggs, scrambled
2 tbsp. milk
1 1/2 cups of Panko or other bread crumbs for coating
FIRST: Get out and lightly grease two baking sheets. I prefer to use olive oil on a paper towel to a spray. Also get out three bowls for your egg wash, your sauce, and your breading.
THEN: Take the prepared cauliflower florets and first dip them in the egg wash, then the sauce, and finally, the breading. Place them on the baking sheets, leaving space between them, and then place them in the preheated oven.
FINALLY: Cook for approximately 20-25 mins, or until nicely browned and fragrant. Serve hot with a side of plain Ranch and chopped celery, like wings!
