A Simple Avo Salad

The other night in quarantine, nobody felt like cooking and everyone had noshed on banana bread except me. I wasn't up for cooking, so I slapped together this simple, refreshing, and delicious salad! I figured it was worth sharing.

Ingredients:

1 scallion, thinly sliced, crosswise

1-2 tablespoons feta cheese crumbles

2 soft-boiled eggs, halved or quartered (so the yolk is just molten, not runny)

2 avocados, ripe and sliced

1 1/2 tsp. olive oil

1/2 lemon, juiced

1/2 tsp. salt

1/2 tsp. freshly ground black pepper


FIRST & FINALLY: Place sliced avocado in a medium bowl. Add feta crumbles, lemon juice, olive oil, scallions, and egg. Sprinkle with salt and pepper.
