My husband and I recently bought a home and we were having friends over to grill. Wanting some sort of veggie dish, I wanted a salad, but not something so hum-drum as a romaine-based bowl of leaves. So, I began searching Pinterest and the interwebz for inspiration. I came across a few really good looking salads that had tomato, cucumber, and feta in them; Natasha's Kitchen's recipe, though, took the cake:
I, however, didn't have the ingredients she used. So, I had to modify her delicious treat based upon what I had. First, I had to nix the onion, we only had yellow. I used English Cucumbers -- the enormous ones from Costco -- a single, whole cucumber. We live only minutes from Costco, so as this blog grows, you're going to see lots of references to this, our second home. I also did not have cilantro, so our salad used balsamic to up the flavor a notch.
Ingredients I used:
Whole English cucumber, cut into small chunks
3-4 large heirloom tomatoes from my fathers garden, cut into small chunks
Feta crumbles, eyeballed to taste
Olive Oil
Balsamic Vinegar
Basically, cut up all the veggies, throw them in the bowl, then dress the damn thing. Of course, finish with s&p to taste!
